With Thanksgiving upon us, I’m mixing things up this year and trying out new recipes. For the pre-T-giving festivities, I’ve got some yummy pumpkin bread. Stay tuned for gluten-free stuffing and sweet potato casserole recipes. Yum! Love a holiday. ๐Ÿ™‚

Gluten/Dairy/Sugar-Free Pumpkin Bread
1 can organic pumpkin puree
2 cage-free eggs
1/2 c canola oil
1 1/2 c brown rice syrup

3 c gluten-free flour (I love Bob’s Red Mill)
2 t baking soda
1 t sea salt
3 T cinnamon
1 T nutmeg

Preheat oven to 350 degrees. Beat pumpkin, eggs, oil and brown rice syrup until smooth. Mix in flour, baking soda, salt, cinnamon and nutmeg. Pour into loaf pan, about halfway full. Bake for 45 minutes or until baked through. If you have additional batter left over, scoop spoonfuls onto a cookie sheet. Bake for 10 minutes or until golden brown.

Love this recipe! It’s easy and uber healthy. Add 1/4c protein powder to increase protein intake, and increase agave nectar to 1 cup.

Gluten/Dairy/Sugar-Free Banana Bread

1/3 c canola oil
2/3 c agave nectar
2 cage-free eggs
1 t vanilla
2 c Bob’s Red Mill Gluten-Free Baking Flour
2 t baking powder
2 T cinnamon
1/2 t Himalayan Pink Sea Salt
1.5 t xanthan gum (Bob’s Red Mill is a great brand option)
3 ripe, mashed bananas
1 c walnuts chopped (optional)

Preheat oven to 350 degrees. Beat oil, agave, eggs and vanilla in large bowl. Stir in flour, powder, cinnamon, salt and xanthan gum. Mass in bananas and walnuts. Once thoroughly mixed, pour into bread loaf pan. Bake for 45 minutes at 350. Let cool and then slice.

After a month traveling to Spain, France and good ole Portland, Ore., I returned exhausted and without much food to eat. And that’s when I decided to open a bag of Food Should Be Good chips – for dinner. These chips are so good, I’m blogging about them, rather than unpacking.

My favorite (I was hungry, okay?!): Cinnamon. They have the most divine salty sweet combo – without the guilt. There’s zero GMO’s or preservatives and they’re 100% gluten/dairy-free. Oh, and the chocolate flavor isn’t too bad either. This company is genius – who would have thought to combine my two favorite guilty pleasures into one item: chocolate and chips?? YUM.

Up the yum-factor by dipping the dessert chips in nut butter – I recommend Trader Joe’s Sunflower Seed butter – for an even more decadent dessert. You can also check out their Sweet Potato and Lime flavors; two of my additional non-dessert fave’s.

Okay, now back to the unpacking.

But, first I’ll have another chip…

LOVE this new chocolate chip cookie recipe!
There are no refined sugars – so enjoy. The cookies are delightful. If I do say so myself. ๐Ÿ™‚

1 c agave nectar
1/2 c Smart Balance Light, melted
2 organic eggs
1 t vanilla extract
2.5 gluten-free flour (I love Bob’s Red Mill)
1/4 t xantham gum
1 t baking soda
1/2 t Himalayan pink sea salt
2 c dark chocolate chips

Preheat oven to 325. Cream agave and butter. Beat in eggs (one egg at a time) and vanilla extract. Stir in flour, xantham gum, baking soda and sea salt until well blended. Fold in dark chocolate chips. Bake 10-12 minutes until golden brown.

Going on vacation is always an adventure when eating wheat/dairy-free and low sugar. Sometimes it goes great and I get to eat lots of yummy new foods and sometimes, I don’t eat much more than salads. It just depends.

This time around, staying/spending time with folks who don’t eat as I do (which is always the case) meant going to restaurants I wouldn’t normally choose and finding clever ways to maintain my diet.

San Francisco was a bit of a surprise for me. I figured that such a healthy, vibrant city would have tons of healthy eating options – but unfortunately, that wasn’t always the case. Asian food made life easier and I did get to go to the infamous Cafe Gratitude in Berkley, where I received the affirmation that I am, in fact, abundant. ๐Ÿ™‚

Check out where/how to eat wheat/dairy-free in San Francisco:

Americano at the Hotel Vitale – Hot scene, horrible menu options. Keep it simple and go with:
Star Route Farms baby greens salad with balsamic vinaigrette and feta cheese (ask them to remove the feta)

The Slanted Door – Great lunch spot: Lemongrass Tofu with Steamed Broccoli

Thai to Go – Awesome lunch locale: Tofu and veggie stir-fry

Cafe Gratitude – AMAZING place – rich, raw food: I Am Enlivened elixir shot, I Am Abundant sampler plate

Paradise Bay: Arugula Papaya Salad

Academy Cafe at the Academy of Sciences: Green Papaya fruit/nut bar (agave nectar sweetened!)

Japanese Fusion at UC Berkley campus: Red Special with Rainbow Roll (DELISH!)

One Market – Very P-town atmosphere but with lots of bright and shiny peeps: Happy Hour: Tequila Lime Marinated Shrimp and One Market Fries (which you need a fork for and should really be called a baked potato).

So, yes – I ate a lot of salads, but the sights and people were so lovely (excluding my time on BART) that it really didn’t matter.

I avoid horror films.
I’ve never seen Nightmare on Elm Street or the Jason series.
Even the hokey Scream films freaked me out a bit.
Bottom line, I don’t do scary.

And then, because I love poetry and I’m part of the kick-ass Read Write Poem community; (founded by the fabulous Dana Guthrie) I agreed to review At night, the dead by Lisa Ciccarello.

I was forced to face my nightmarish fears, as Ciccarello calls the dead out, revels in their beauty and isn’t at all bashful about the freakishness of it all.

The dead lose nothing. Here is this curtain. Everything they ever wanted: the window view, soap that floats, someone pressing down hard. Lips made out of paper. A smile that shines (just a flame at his mouth & so what). In the dark thereโ€™s the swamp & the sound of the swamp & the lightning that balls above it. The dead want to grow here, the dead plant the bad vegetables that rot before they eat them. I want a space beneath the boards, something I can put in the floor, I want a root cellar full of fruit that lasts. He knows itโ€™s not enough: home. With each exhale our hands move farther apart.

Ciccarello dances lightly around what we’re all afraid of – death and the dead. And suddenly its not so scary, suddenly it’s rather (dare I say it) fascinating. That’s not to say some of the poems featured in this chapbook didn’t send shivers up my spine; they did. But, that’s what good poetry is meant to do – make you feel. Even if that feeling results in keeping all the lights in the house on, 24/7.

At night, the dead is a perfect gift for any lover of Halloween and all things ghoolish. In fact, you should probably order one now for your upcoming Halloween party. Or if you happen to love horror, you will love this lyrical, creepy compilation of all things dead.
