My grandma passed on this recipe – it’s an easy wheat-free, dairy-free and low-sugar favorite. Make it for dinner tonight, it takes 5 minutes to prepare and in an hour you’ve got a great main dish. Pair with wild rice and steamed green beans.

Tangy Chicken Bake

4 chicken breasts
1/8 t red pepper flakes
1/4 t black pepper
1 t garlic salt
1/4 cup Catalina Dressing
1 T mustard

Serves 4

Preheat oven to 350F. Rub red ground pepper, black pepper and garlic salt on chicken breasts. Place chicken in baking dish. Combine Catalina dressing and mustard in bowl. Brush or pour mixture over chicken. Bake 1 hour or until chicken is cooked through.

I love a good snack. In fact, I’m one of those people that loves to eat little meals throughout the day. So, I’m always trying to create good (and easy!) snacks for myself.

Here’s my latest love affair:
1 cup No Sugar Added Applesauce (try Seneca 100% Natural Applesauce)
1 T ground cinnamon

Stir cinnamon in and enjoy!
When choosing an applesauce, just stay away from anything with high fructose corn syrup and you’ll be all good.

Oh, and I made a fabulous cookie discovery this weekend – Pamela’s Chocolate Chip Mini Cookies. I was hanging out with friends and was advised to bring some snackie’s. So, I grabbed these and they were a huge hit. One warning – they’re so good, you’ll be shocked at how fast you and your friends consume the entire bag. But, it’s worth it.

Have you powerfully set up 2008 for your writing business? I’m not talking about resolutions, I’m talking about creating intentions that put you on track to achieve the most personal satisfaction (not to mention make the most money!) that you can in 2008.

Since I started my business full-time in 2006, I’ve leaned on Brooke Emery as my go-to gal for making it happen. Today, I’m happy to report that my business is thriving beyond my wildest expectations, with amazing long-term writing contracts AND two book proposals sitting on the desks (and being read, I hope!) by major U.S. publishers. The inspiration/motivation and accountability that I received through Brooke’s teleclasses and coaching played a HUGE role in my success.

I’ve been having quite the love/hate relationship with New Seasons Market recently.

Sure, I love the pretty stores, yummy food and friendly staff. But, when the holidays were in full swing, New Seasons let me down when I needed them most. Their frozen spelt pie crust has been my savior for the last several years when it comes to making my wheat-free, dairy-free and no refined sugar pumpkin pie. Two days before Thanksgiving I went to pick up my pie crust. It was gone. New Seasons had discontinued it! I thought I might cry and left an unfriendly comment card noting my despair. (Insert drama queen here.)

Surprisingly, the retailer called apologizing, promising they would re-order the crusts and would have them on the shelf in time for Christmas cooking. I returned, fully trusting that New Seasons would come through for me. They didn’t. Still no pie crusts. I left yet another, angry comment card, citing my blog address.

Lo and behold, I received another apologetic call with promises that the pie crusts would be in the store by the end of the week. And guess what? They were! Yay! My Christmas pumpkin pie went off without a hitch. Also, to make sure I never suffer this pie crust injustice again, I bought 4 additional crusts, just to cover my bases.

I’m also really proud of New Seasons for pulling through, despite dropping the ball. So, the moral of the story is – make sure to let your health food stores know if you need something they don’t carry. Chances are – they just might come to your rescue.

So, tomorrow is Monday morning. The first full work week in quite some time for many of us. Anyone besides me less than thrilled with this prospect? I know, I know – you didn’t think about it until I mentioned it. Sorry to be the bearer of bad news.

BUT, I do have a solution.

A great way to kick your Monday (or any day for that matter) into high gear is to purchase a deck of Doreen Virtue’s healing cards. I have her Fairies deck – recommended to me by a good friend. The cards are beautifully illustrated and can be used to give yourself and others readings (think Tarot, but prettier and cooler). Or you can pull a card every morning to receive guidance in a particular area of your life, complete with an uplifting affirmation to clear any negative energy.

While it may sound a bit “out-there” for some of you – it’s 1) a lot of fun and 2) eerily insightful. I cannot tell you how many times I’ve pulled a card, only later in the day to discover exactly why I pulled that particular card. Lots of great insight and it really gets you excited for the day ahead. So, get a deck and start your day off with a shot of insight and inspiration!

I’ve also had a reading done by a friend using the Ascended Masters cards, and they are also beautifully illustrated and fabulous.

While we already know we feel better when we don’t consume wheat, we can now take comfort knowing that we’re also saving ourselves some serious cash.

That’s right, eating wheat-free will save you money in 2008.

The USDA recently reported that food prices are expected to make unprecedented increases, with wheat and soybean oil (used in cooking oil and fried foods) getting hit the hardest. The price increases are supposed to be so dramatic, that the cost of cooking at home will rise 4.5 percent! This is the largest food price increase since the 1990’s (during a certain war in the Middle East).

So, why are food prices increasing? No one seems to know – although oil/gas prices are believed to be at the root of the problem. The trucks/planes/trains that bring us our goods require gas/oil, and with atrocious gas prices, the price increases are simply being passed onto us. Thanks George W.!

In any event, it’s nice to know that I’m not only helping my body function better by not eating wheat, but I’m also saving cash.

Do you know if your writing desk is in the command position?

The command what? I know, it’s not the first thing you think of when setting up your home office. However, the location of your desk can greatly impact your cash flow, confidence level and overall energy.

For instance, did you know that if your desk faces a window or your back is against a window, your chi (or life force) is literally being pulled right out of you? Yep. Or if your back is facing the door, you’re putting yourself in the least powerful position? Oh, it’s true.

To optimize your abundance, your desk needs to be facing the door of whatever room your in, ideally diagonal from the door.

When I heard this tidbit of information from feng shui expert Gwynne Warner with 10K Blessings Feng Shui, I jumped right on it. My desk was, at the time, facing a window. I promptly went home and placed my desk in the command position. Within 2 days, I had 3 new writing gigs! I was hooked.

Take your abundance level up another notch by setting up the prosperity corner of your desk. It’s located in the upper right hand corner. Place something red or some other object to indicate abundance. I have an antique jewelry box filled with money and pearls, a citrine stone (for success) and an abundance statement (noting my $10,000 a month income).

If you want to know more, check out a bagua – I’ve set up my entire house according to basic feng shui princples. It’s amazing because you can actually feel the energy shift. Or you can hire a feng shui consultant and have he/she do it all for you!

I love going out to eat for breakfast. Not only is it a really easy meal to adjust to the wheat-free, dairy-free and low sugar lifestyle (oatmeal, anyone?) it’s just fun. Especially on Sunday mornings. With the Sunday paper in tow, breakfast out is the perfect way to kick into lazy Sunday mode

But going to a greasy spoon diner (a la’ Biscuits Cafe in Portland) can be quite the challenge. Unless of course, you’re prepared ahead of time.

Use the tips below for eating out – diner style:

-Drink a full glass of water before going to the restaurant.
-Only pay attention to the omelette, scrambles and side dish portions of the menu. Don’t even look at pancakes/french toast/waffles – this will be tempting and a little bit sad. 🙂
-Always ask for no cheese, or light cheese – depending on your tolerance level.
-Ask to have your food cooked in Canola oil, not butter.
-Order a veggie scramble or omelette with cut potatoes or hashbrowns.
-Ask for fruit as a substitute for toast/muffin.
-Order the side of bacon, just dab with a napkin before eating. Say it with me – protein is your friend.
