Oprah never ceases to amaze me. I’m not a huge book club fan (I thought her public shaming of James Frey was over the top and I read Eat. Pray. Love. far before she told me to) BUT she’s doing something really amazing that you need to know about.

She’s joined forces with Eckhart Tolle (author of the Power of Now – if you haven’t read it – do so – it rocks!) to offer the world an incredible opportunity – join an online class with Oprah and Tolle to dissect his newest book, A New Earth: Awakening to Your Life’s Purpose. Wow!

I love Tolle and the book sounds fabulous.

With Valentine’s Day quickly approaching, I’m looking for goodies beyond heart-shaped milk chocolate (lame!) that add a bit more zest to my V-day sweet tooth.

Recently I discovered a yummy dessert – Purely Decadent Dairy-Free Gluten-Free Cookie Dough soy cream. Scoop up some of this goodness and add 1/2 a sliced banana and a handful of carob chips for an indulgent V-day treat.

In the meantime, I’ll be a cooking up a lovely V-day dessert…so stay tuned for pictures and the recipe.

Had to share this – I just watched The Nine’s last night written and directed by John August and starring the surprisingly yummy (when did this guy get hot?!) Ryan Reynolds.

It’s deep, well-written and fun to watch. The boyfriend and I watched it last night and I’m still thinking about it.

And, there’s a new movie coming out soon called The Moses Code, which takes the whole Law of Attraction thing to another level. I recently saw Neale Donald Walsh speak and it was fantastic. It isn’t just about manifesting for ourselves, it’s about helping/serving others. Now, THAT’S a message I can get on board with.

Breakfast is one of my favorite meals of the day. And because I can’t nosh on a chocolate croissant from the local cafe or enjoy decadent pancakes while dining out, I create my own fave breakfast – crepes. In preparation for my upcoming trip to France, I created this yummy breakfast recipe:

1 cup spelt flour
2 vegetarian fed eggs
1/2 cup vanilla almond milk
1/2 cup purified water
1/4 t salt
2 T melted butter (try Smart Balance Light)
1 T cinnamon

Mix together spelt, eggs, milk and water. Add salt, butter and cinnamon and mix until smooth. Then, use a skillet (make sure to coat with non-stick cooking spray!) on medium heat and pour 1/2 cup of batter into the pan. Tilt pan until mixture is spread evening throughout. Cook for 1-2 minutes or until golden, flip over and cook an additional 1 minute, or until golden.

1 mango, chopped
1 banana, chopped
1 peach, chopped
1 T cinnamon

Saute fruit and cinnamon in small skillet until cooked through and hot.
Serves 4

Add filling mixture to crepe and roll up like a burrito.

My grandma passed on this recipe – it’s an easy wheat-free, dairy-free and low-sugar favorite. Make it for dinner tonight, it takes 5 minutes to prepare and in an hour you’ve got a great main dish. Pair with wild rice and steamed green beans.

Tangy Chicken Bake

4 chicken breasts
1/8 t red pepper flakes
1/4 t black pepper
1 t garlic salt
1/4 cup Catalina Dressing
1 T mustard

Serves 4

Preheat oven to 350F. Rub red ground pepper, black pepper and garlic salt on chicken breasts. Place chicken in baking dish. Combine Catalina dressing and mustard in bowl. Brush or pour mixture over chicken. Bake 1 hour or until chicken is cooked through.

I love a good snack. In fact, I’m one of those people that loves to eat little meals throughout the day. So, I’m always trying to create good (and easy!) snacks for myself.

Here’s my latest love affair:
1 cup No Sugar Added Applesauce (try Seneca 100% Natural Applesauce)
1 T ground cinnamon

Stir cinnamon in and enjoy!
When choosing an applesauce, just stay away from anything with high fructose corn syrup and you’ll be all good.

Oh, and I made a fabulous cookie discovery this weekend – Pamela’s Chocolate Chip Mini Cookies. I was hanging out with friends and was advised to bring some snackie’s. So, I grabbed these and they were a huge hit. One warning – they’re so good, you’ll be shocked at how fast you and your friends consume the entire bag. But, it’s worth it.

Have you powerfully set up 2008 for your writing business? I’m not talking about resolutions, I’m talking about creating intentions that put you on track to achieve the most personal satisfaction (not to mention make the most money!) that you can in 2008.

Since I started my business full-time in 2006, I’ve leaned on Brooke Emery as my go-to gal for making it happen. Today, I’m happy to report that my business is thriving beyond my wildest expectations, with amazing long-term writing contracts AND two book proposals sitting on the desks (and being read, I hope!) by major U.S. publishers. The inspiration/motivation and accountability that I received through Brooke’s teleclasses and coaching played a HUGE role in my success.

I’ve been having quite the love/hate relationship with New Seasons Market recently.

Sure, I love the pretty stores, yummy food and friendly staff. But, when the holidays were in full swing, New Seasons let me down when I needed them most. Their frozen spelt pie crust has been my savior for the last several years when it comes to making my wheat-free, dairy-free and no refined sugar pumpkin pie. Two days before Thanksgiving I went to pick up my pie crust. It was gone. New Seasons had discontinued it! I thought I might cry and left an unfriendly comment card noting my despair. (Insert drama queen here.)

Surprisingly, the retailer called apologizing, promising they would re-order the crusts and would have them on the shelf in time for Christmas cooking. I returned, fully trusting that New Seasons would come through for me. They didn’t. Still no pie crusts. I left yet another, angry comment card, citing my blog address.

Lo and behold, I received another apologetic call with promises that the pie crusts would be in the store by the end of the week. And guess what? They were! Yay! My Christmas pumpkin pie went off without a hitch. Also, to make sure I never suffer this pie crust injustice again, I bought 4 additional crusts, just to cover my bases.

I’m also really proud of New Seasons for pulling through, despite dropping the ball. So, the moral of the story is – make sure to let your health food stores know if you need something they don’t carry. Chances are – they just might come to your rescue.
